What’s Cookin’? Energy Bites

Last winter, I stumbled upon the blog Nourishing Days.  Shannon and her family are living off grid and sharing their story.  She recently posted a recipe for these quick and easy energy bites on the Plan to Eat blog (a blog where she contributes).  These really are quick and easy.  I whipped up a test batch of these the other morning while the boys were eating breakfast.

The recipe below is my version.  The original was inadvertently changed as a result of being interrupted while measuring ingredients (I was planning on doubling the recipe).

Hubby, who is not a big fan of sunflower butter, actually enjoyed these.  I am sort of glad I messed up for his sake. 🙂

Energy Bites
adapted from this recipe

1 1/2 cups (divided) unsweetened shredded coconut
1/4 cup sunflower butter
1 tablespoon honey
dash of ground cinnamon

In a small bowl, put 1 cup of coconut.  Use your fingers to separate the clumps of coconut.  Add the sunflower butter, honey and cinnamon.  Mix together until it forms a paste.

In another small bowl, put the remaining coconut.  Taking small amounts (about a teaspoon) of the mixture and form it into a ball.  Roll it around in the coconut until covered.

Enjoy immediately, or allow them to set up in the refrigerator and enjoy later.
