This was a meal that my mom created one night when she wasn’t sure what we were going to have for dinner. She just started pulling ingredients out of the cabinets and voila! Yummy, easy chicken dinner!
4 chicken breasts*
1 can artichoke hearts (not marinated), quartered
1 quart canned green beans (home-canned are the best)
1 medium tomato, sliced
Preheat oven to 350 degrees. In a 9×13 baking dish, place the chicken breasts. Place a slice of tomato on each chicken breast (use more if desired). Cover chicken with artichoke hearts and green beans. Pour Italian dressing over chicken, use enough to flavor the chicken. Bake covered for 25 minutes, remove cover and bake an additional 15 minutes or until juices are clear. Sprinkle chicken with cheese in the last few minutes, giving it just enough time to melt.
Serve over spaghetti.
*You could marinate the chicken in the Italian dressing for a few hours before baking.
