Another simple, one-dish meal. Serve with a green salad.
Swiss Pasta Bake
16 oz uncooked pasta (penne, farfalle, rotini, etc.)
2 cups ham – chopped
2 chicken breasts – cut into 1/2 inch cubes
3 Tbls butter
6 green onions – chopped
4 cups milk
3 cups shredded cheddar cheese
1 1/2 cups shredded Swiss cheese
1 1/2 cups frozen peas, thawed
3/4 tsp pepper
1/2 tsp dried thyme
Cook pasta according to the package directions. Drain pasta and set aside.
Melt butter in large skillet, cook ham and chicken until chicken is no longer pink. Add green onions; cook 1 minute longer. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in cheeses, peas, pepper and thyme.
Add pasta to chicken mixture and toss to coat. Transfer to a greased 9 x 13 baking dish
Bake uncovered at 350 degrees for 30 minutes or until golden brown.
