At our CSA we have the option to cut fresh basil, so a couple of weeks ago we decided to cut a BUNCH since there was a long row that was quite bountiful.
We decided to use the basil to make pesto. I had never made pesto before so when I started looking for recipes I was disappointed that all the recipes had nuts in them. One of our boys has a peanut/tree nut allergy and I wanted him to be able to try whatever we make with the pesto. So I did a bit more research and was excited to find this recipe!
Basil Pesto without Nuts

We used the pesto for dinner in a chicken and penne dish. I sauteed chicken breasts in oil and garlic with a little salt and pepper. Once the chicken was cooked, I threw in frozen peas and cherry tomatoes. When they were to the desired doneness I mixed together the cooked penne, chicken and vegetables, and pesto sauce in a large bowl and served it with freshly grated Parmigiano-Reggiano. Delicious!! The boys even liked the pesto on the chicken!
We are hoping that there will be plenty of basil to cut this week so that we can make more pesto and freeze it!
